The beef that most of us cook with is extracted from older cattle and less expensive. Older cattle that have lived a long life are generally more flavorful and weigh much more than younger calves. They are often past the age of breeding calves and or providing milk and have increased in demand. 

Why cook with veal? Veal is considered high quality beef and one of the most nutritious proteins in the world. It is easy to prepare and you don’t have to be a seasoned chef to cook a great veal meal. It can be braised, stewed, fried, sauteed, stir fried, or boiled. Regardless of how you plan to cook the veal, the key is to avoid overcooking veal. Since it is such a tender protein, we recommend cooking the meat to medium using a thermometer to maintain internal temperature at 160 degrees. When doing a visual check, make a slit near the bone or the center and it should be light pink. Other tips for making veal include: 

  • Buying – When choosing the best veal cut, you want to pick one that has fine-grained texture with a pink complexion. Some fat and marbling is great for added flavor and the packaging should be tight with no excessive juice. 
  • Storing – We recommend buying your veal cut within 1 to 2 days of cooking your meal. If you don’t plan to cook it right away, you can freeze it like any other meat. 
  • Flavoring – When it comes to flavoring veal, the options are endless. Ensuring that your flavoring techniques coincide with the ingredients is a must. Once you’ve determined what you want to include with your veal cut, feel free to marinate, glaze, sauce, dry rub, crust, bread, or stuff.

How to Make Veal Parmesan 

Now that you know how to pick and season the best veal cut you can find, let’s dive into making a delicious veal parmesan recipe! Also referred to as Veal Parmigiana, this recipe is super easy to make and chicken or turkey are acceptable substitutes. For pasta, you can include a number of options like linguini, angel hair pasta, and spaghetti. Pair this recipe with a side salad and soft garlic bread, and you have a meal that may not last past one night. 

Ingredients: 

  • 1 pound of veal (4 cutlets)
  • Salt
  • Black pepper
  • ½ cup of flour
  • 2 beaten eggs
  • 1 cup of seasoned bread crumbs
  • 2 tablespoons of oil
  • 4 tablespoons of parmesan cheese
  • 1 can tomato sauce (8 ounce)
  • 8 ounces sliced mozzarella cheese

Preparation: 

    • Phase 1: Place all ingredients on the table and heat the oven to 350 degrees. Grease a shallow, flat baking pan big enough to hold all 4 cutlets.
    • Phase 2: Season the cutlets with the salt and pepper and lightly cover with flour. 
    • Phase 3: Next, submerge the cutlets in egg and breadcrumbs. 
    • Phase 4: In a large skillet, heat the oil over medium heat. Place the breaded cutlets in the pan and cook each side for 3 to 4 minutes until browned. 
    • Phase 5: Now place the cutlets into the baking pan and sprinkle with parmesan cheese. 
    • Phase 6: Take the tomato sauce and spoon over the cutlets. Add the mozzarella cheese to the cutlets. 
    • Phase 7: Place the baking pan into the oven for 10 to 15 minutes. 
    • Phase 8: Remove the baking pan from the oven and enjoy! 

Secrets of Great Italian Veal Dishes

As mentioned before,  you can replace this Italian – American classic with turkey or chicken if you prefer. If you’re looking for other options, pork cutlets or pork tenderloin is another flavorful substitute. When you want to upgrade this meal, try sauteing 4 to 6 ounces mushrooms in butter and spooning over the veal before adding the sliced cheese. For those of us who delight in peppers and onions, saute a cup of red and green bell peppers with a sliced onion to add over the cutlets with a rich Merlot and change your life! When you’re feeling fancy and sophisticated, you can make your own marinara sauce instead of canned tomato sauce and impress the in-laws! Some other delicious options with veal await you including adding: 

  • Capers and a squeeze of lemon
  • Linguini, spaghetti, or any pasta of your choice
  • Caesar salad or other variation of your liking
  • Garlic bread or focaccia
  • Additional seasonings like parsley flakes, garlic powder, and dried basil
  • Mashed potatoes
  • Steamed, sauteed, or roasted vegetables
  • Or serve on a toasted hoagie bun for an appetizing veal parmesan sandwich!

Some barns are heated during the winter months with year long ventilation for the calves. Quality feed is a key part of maintaining the health, energy levels, and growth of young calves. Producers of veal are required to participate in the Veal Quality Assurance Program that maintains the highest standards of care for certification.
