The Best Grilled Caesar Salad Recipe

When you grill the lettuce, it adds a pop of flavor you won’t find in a regular grilled caesar. The key is to use hearty varieties of lettuce that provide adequate structure to the dish. Here’s how to prepare it: 


  • ¼ cup of mayonnaise
  • ½ teaspoon of minced garlic
  • ½ teaspoon of kosher salt with extra for additional seasoning
  • ½ teaspoon of black pepper with extra for additional seasoning
  • ½ cup of extra virgin olive oil with extra for brushing
  • ¼ cup of finely grated parmesan cheese for garnishing
  • 2 romaine hearts
  • 1 cup of croutons
  • 1 tablespoon of anchovy paste
  • 1 tablespoon of dijon mustard
  • 2 tablespoons of lemon juice

A Delicious Chicken Caesar Salad With Parmesan Cheese Dressing and Croutons


  • Phase 1: First, combine the anchovy paste, garlic, mustard, mayonnaise, salt and pepper, and lemon juice together in a bowl. 
  • Phase 2: Slowly add the olive oil until the dressing becomes thickened, then add the parmesan cheese. 
  • Phase 3: Now, halve the romaine hearts into eight lengthwise quarters with the middle cores intact. For smaller heads-up lettuce, cut into halves. 
  • Phase 4: After brushing olive oil on both sides of the lettuce, sprinkle with salt and pepper. 
  • Phase 5: Next, preheat the grill to 350 or 400 on medium-high heat and grease cooking grates with tongs and an olive oil-soaked paper towel. 
  • Phase 6: When grates are hot, place the lettuce on the grates cut side down, pressing the lettuce so that it makes direct contact with the grates for one or two minutes until charred on both sides.
  • Phase 7: Once charred, transfer the lettuce to serving plates and drizzle with the caesar dressing, parmesan cheese, black pepper, and croutons.

A Consortium for Parmesan in Reggiano was created to monitor and protect the origins and production of the cheese. This close monitoring became a necessity due to the rising fame of the cheese when agricultural and commercial production dramatically increased. By the 16th century, it was marketed all throughout Europe and eventually, the world. When you see a PDO designation, which stands for “protected designation of origin” you know you’re getting the good stuff.
